DINUGUAN3 cups internal organs (heart, liver, pancreas, meat with fat) 1 ½ cups blood ½ cup vinegar mixed with ½ cup water and 1 tbsp salt 3 ½ cups water 1 tbsp salt 1 small onion, sliced 3 segments garlic, pounded 2 hot chili peppers 3 tbsp lard 1. clean and cut internal organs into small pieces. 2. cook in a saucepan with the vinegar mixture until tender. 3. in another saucepan, sauté garlic and onion. 4. add boiled internal organs and continue cooking for five minutes. 5. add the blood little by little, stirring the mixture while adding and let it boil. Be sure to cut the coagulated blood to small pieces before adding. 6. add water, season with salt and cook covered for a few more minutes. 7. add hot pepper just before removing from fire. 8. keep covered and serve hot with puto.

PAKSIW NA DILIS (PICKLED DILIS)
2 cups fresh dilis 4 tbsp vinegar 1 cup water 3 cloves crushed garlic, little piece of ginger 1 tbsp pork lard Salt
Clean dilis, removing heads and intestines. Wrap every 10 pieces in a strip of banana leaf and place the wrapped fish in a pot. Add remaining ingredients and simmer until done.

A DOBONG PUSIT
1 kilo pusit (squid) 1 tbsp oil 1 tbsp minced garlic ¾ cup vinegar 1 tbsp salt 1 tbsp pepper 1. Clean the squid. Remove the ink sac. 2. Heat the oil and sauté the garlic until brown. 3. Add the squid, vinegar, salt and pepper. 4. Simmer until squid is done. This takes only a few minutes. Overcooking the squid will result to a rubbery squid. 5. Add ink sac just before removing the fire. 6. Serves 8.

TOCINOIngredients for every kilo of pork: 2 tbsp salt 4 tbsp sugar 1/8 tsp salitre 1. Sprinkle the mixture over the meat slices placed in a suitable container. Mix all to distribution the curing agent evenly. Pile the pieces on the bowl and cover. 2. Keep at room temperature for 24 hours or in a refrigerator for three days to cure. 3. Cook in a little water until its own fat is extracted. 4. Fry until done.

Tuna Shrimp Curry
2 tbsp oil 2 tbsp flour 1 tsp curry 1 cup raw peeled shrimps 1 can tuna Salt and pepper 2 cups coconut milk
Heat oil. Add flour, stirring to blend well. Add curry and shrimps. Cook over a slow fire until shrimps turn pink, adding a little water if necessary. Add seasonings and tuna. Few minutes before serving, add coconut milk. Heat but not boil. Place shrimps on platter. Sprinkle top with chopped roasted peanuts.

CHICKEN CURRY
1 chicken, cut in pieces 4 cloves garlic 1 onion, minced 2 tomatoes, chopped Green and red bell pepper 1 tsp curry 3 potatoes, peeled and quartered 1 ½ cups thick coconut milk Salt Oil
1. Cook chicken with a little oil until brown. 2. Place in a saucepan; add water to barely cover. 3. Simmer gently and when nearly tender, add potatoes. 4. Cook until potatoes and chicken are tender. 5. In a little oil, sauté garlic, onion and tomatoes. 6. Add curry, chicken and potatoes. 7. Add coconut milk. 8. Heat but do not boil. 9. Season and serve with chutney.

Fish With Crab Sauce
¼ kilo boned fish, cubed 1 tbsp cornstarch ½ tsp monosodium glutamate (You can find this monosodium glutamate in Filipino stores locally known as aji-no-moto or vetsin) Salt
1 egg white 4 tbsp crab meat 2 tsp oil 1 cup milk mixed with 1 cup water
Mix fish with first ingredients. Fry in hot fat. Mix crab meat, seasonings, oil and milk.

Pinkz, niara ang Pot Roast Beef nga imo giganahan...it has two options unsaon nimo cya pagluto, pwde i baked nimo cya or gamit ka slow cooker... mas lami cya if slow cooker imo gamiton but it will take 10-11hrs..if dinalian, just bake it using the oven for 4hrs the most...

1 cup cooked shelled shrimps 1 cup fish fillets 3 tbsp oil 1 onion, minced ½ cup tomato sauce ½ cup celery, sliced 1 cup cooked rice Salt and pepper
Cut fish in cubes. Dredge with flour and brown in hot fat. In a separate pan, sauté onion in oil, add tomato sauce, and other ingredients. Simmer gently until celery is cooked but still crunchy. Add rice, stir well, and seasonings. Serve hot.

Shrimps in Golden Pond
7 eggs ½ kilo shrimps 1 tbsp diced ham Salt and pepper
Beat eggs with equal amount of cold water. Salt to taste. Put in shallow dish, put shrimps on top. Steam for half an hour. Garnish with parsley.

2 tbsps oil 2 onions, sliced 4 cups raw peeled shrimps 2 cups cabbage 1 carrot, ringed 2 dry mushrooms, soaked and sliced 1 cup green pea (snow pea pods) 12 quail eggs, boiled
Heat oil, add onions and shrimps. Sauté for a few minutes. Add vegetables and enough chicken stock. Season with soy. Thicken with sauce (cornstarch dissolved in cold water). Serve hot, garnished with boiled quail eggs.
